I ended up doing something like:
unicorn_logger = Logger.new("/home/xxxxxx/current/log/unicorn.log")
unicorn_logger.formatter = Logger::Formatter.new
logger unicorn_logger
... but, I think you can do this as well:
Configurator::DEFAULTS[:logger].formatter = Logger::Formatter.new
